谷胱甘肽(glutathiose,r-glutamyl cysteingl +glycine,GSH)是一种含γ-酰胺键和巯基的三肽，由谷氨酸、半胱氨酸及甘氨酸组成.存在于几乎身体的每一个细胞.谷胱甘肽能帮助保持正常的免疫系统的功能，并具有抗氧化作用和整合解毒作用，半胱氨酸上的巯基为其活性基团（故常简写为G-SH）.
艾美捷谷胱甘肽检测试剂盒利用地酶促循环的方法，通过谷胱甘肽还原酶来定量样本中的GSH.GSH的巯基基团可以与DTNB反应产生黄色TNB，混合的二流产物GSTNB能被谷胱甘肽还原酶还原成GSH，并形成更多TNB.TNB的产出率与样本中GSH的含量成比例.TNB的吸收光为405或者412nm.GSH能很容易被氧化成二硫聚合物GSSH.
